It’s about halfway through football season and I have had to be very creative with game day menus because quite frankly, the family is getting pretty bored. This last weekend, I decided to take what my daughter loves and what my son loves and combine them into one awesome game day feast! Lexi is a taco fan, more specifically, she loves tortillas and anything she can eat on a tortilla. And ever since I introduced her to the taco boats last month with the Homemade Chili Boats, she has been HOOKED! Gavin, on the other hand, is always wanting walking tacos, every day too. That is how the Walking Taco Boats were born. These little boats of goodness were a major hit, even with hubby who isn’t a huge corn chips fan and I was happy because they were so easy to make. Anything that makes my life easier is okay in my book. I have even added these to our regular menu plan since they loved them so much. Game day not needed for these puppies!
Like I said, super easy, first, I headed to Walmart for the Old El Paso Soft Tortilla Taco Boats Dinner Kit and some refried beans. We chose Old El Paso Black Beans this time but any style works. We also picked up some fresh produce and the rest:
Ingredients
- Lettuce
- Red Bell Pepper
- Green Bell Pepper
- Corn Chips
- Ground Beef
- Sour Cream
- Shredded Cheese
Quantities truly depend on how many you are serving. This was just for my small family and it made approximately 6 Walking Taco Boats.
Instructions
First, brown up 1lb of ground beef, add the seasoning packet from the Old El Paso Soft Tortilla Taco Boats Dinner Kit and 2/3 cup water. Mix well and heat until the sauce starts to thicken. Next, add the refried beans, mix and heat through.
Remove from the burner and add the diced bell peppers and let sit for 5 minutes. This allows the bell peppers to cook a bit without wilting.
Next, comes the assembly…layer some corn chips on the bottom of the boats then top with meat mixture. Then just add your favorite toppings, such as lettuce, cheese, and sour cream. I also recommend black olives, please, if your child loves black olives like mine does, you do not want to forget the olives. Lexi won’t leave me alone that I keep forgetting them…ALL THE TIME!

That is it, didn’t I tell you it was super easy? Sunday’s are for relaxing as far as I am concerned so I really don’t want to spend all day cooking the food.
