Well, it is officially the first day of school!  Lexi is now a Sophmore, such a scary thought, and Gavin is a 2nd grader!  While I am excited to have the house to myself again and start my vacation, I know that I will probably miss having them around by next week.

I always do something special for the kids on the first day of school, whether it be a special dinner, dessert or even an after school snack and this year is no exception.  When I was at Safeway, trying to figure out what to make the kids for their treat, I saw that Hillshire Farm has new Natural Honey Roasted Ham with no artificial ingredients and 97% fat-free, I wanted to try it out.

I thought of the pinwheels my mom used to make when I was a kids, cream cheese and turkey on tortillas and knew I wanted to make my own version.  I grabbed the ham, some cream cheese, ranch mix and tortillas and headed home.  Then, last night, after the kids went to bed, I went to work.  These instructions are for 2 soft taco sized tortillas:

Mix together 1/4 cup room temperature cream cheese with ranch mix.  Do this to your taste, we like ours a little on the stronger side when it comes to ranch flavor, so I think I used about half a packet.  But I added a little bit at a time until I had the perfect flavor.  Once you have it all mixed together, spread half the mixture evenly onto a tortilla, leaving about an inch on one end.

Add 3 slices of Hillshire Farm Naturals Honey Roasted Ham, on top of the cream cheese mixture.

Roll the tortilla tightly, towards the uncovered end until it is completely rolled.  You may need to add a small amount of cream cheese to the end to seal it.

Wrap the tortilla in saran wrap and twist the ends closed.  Place in the refrigerator to chill.

After an hour, take it out and remove the wrap.  Cut off the uneven ends and sneak a taste (maybe that’s just me) and slice up the rest into 1 inch slices, stick a toothpick, or a party pick in them to keep them together and serve!

I can’t wait till the kids come home this afternoon so they can try this with their other favorite after school snack, grapes!!  For now, I need to wake them up for their first day.

    Mmmmm yum! I give my kids ham and cream cheese in a tortilla. However, I usually just fold it like a burrito and call it a day. Never thought to chop then into wheels or add ranch seasoning to the cheese. Thanks for the idea! 🙂 My kids don’t start school until next week, but I might make it their first after school snack too!

    That is a very easy snack idea. My daughter loves to make toast with avocado, strawberries and feta cheese for a snack.

      I am a lot like your husband, I have tortillas for everything! Technically I do it because they are low carb and they are replacing my breads, but I still love them so it’s all good! And I can see getting tired of peanut butter on tortillas, although I have peanut butter every morning with my apple!

      What else does he put on tortillas? I am trying to find more ideas for my own meals and snacks!

    Ooooh! My 1st grader starts school on Monday and I’m thinking these would be great! I know she’d love them, plus I’ve never made them so it would be a fun surprise for her.
