Yes the title is correct, there are NO chocolate chips in these cookies! What a shame right? I actually prefer them without chocolate….GASP…..Oh and see that CUTE little stand?? I got that at Wholeport along with a black one and an orange one!! I am waiting for my new light blue, red and white ones to be delivered!! I LOVE Wholeport, their selection of craft supplies is AMAZING and at great prices!!
When Amber over at From Crazy Town with Love and I started doing Girls Day In, we decided we wanted to do plenty of baking and I couldn’t think of anything better than my favorite cookies (snickerdoodles come in a VERY close second). However, Amber has baked with me before and said my cookies looked like crap and yeah she’s not wrong. She even made a point of showing me how PERFECT hers were. She has been teasing me since. So when she showed up, she had bought me a cookie scooper. Then , I swear she started pulling a Mommy Dearest on me. If she had night cream on her face and waving a wire hanger at me, I would have run for the hills!!! She looks INSANE doesn’t she? It’s okay, I love her anyways!
So we started baking but I had forgotten to take the butter out to soften so we were forced to put 1 cup into the microwave for a quick soften, but for future references (and subsequent batches) a good technique is to put the butter on the stove as the oven heats up. It softens up faster without having to deal with some melted like when using a microwave. Thank you Amber for that tip!
I took a bunch of pics of the process of making the dough, but yeah they turned out pretty bad, so I’m sure you can imagine what it looked like! First I sifted together 2 and a half cups of flour, 1 tbsp cinnamon, 1 tsp salt and 1 tsp baking soda and set them aside. Then in my mixer, I combined the 1 cup of softened butter, 3/4 cup suger, 3/4 cup brown sugar, and 1 1/2 tsp vanilla extract and beat them till it was all creamy. Then I beat in 2 eggs, 1 at a time till combined. Next came the flour mixture, I added a large spoonful every 5-10 seconds (do not add it all at once or you will have a MAJOR cloud of flour everywhere) until the dough is thick and somewhat sticky.
This was when Amber started acting like Joan Crawford and had to show me how to use the scoop. For the record, I knew HOW to use the scooper, I just never HAD one. So we scooped out 12 onto a sheet tray and put them in the oven for about 15 minutes. Technically it’s 8-10 minutes, but I like my cookies a little burnt on the bottoms and crispy so mine were in longer.
While those were baking, we filled another sheet tray with 25 scoops (the rest of the dough) and stuck in the freezer. You should leave them in the freezer for at least 1 hour, longer if you are in warmer climates.
Meanwhile, the cookies came out of the oven and they were PERFECT (for me)!! And yes, I admit they look a lot better than other cookies I have made, so I guess Amber was right. Ouch, that hurt to say. Too bad she is gonna read this or I would tell you not to tell her.
We got to talking A LOT as we always do and kind of forgot about the dough in the freezer, so they were in for about 2 hours. It doesn’t matter at all, but we almost forgot to take them out and put into a bag!! They didn’t lose their form at all and were definitely frozen throughout.They were a LITTLE tough to take off the tray, so we recommend using wax or parchment paper, but I didn’t have any. Amber simply twisted them off the tray and put them in the freezer bag.
We made sure to label the bag with what kind and of course the date. The cookies should be used within 3 months of freezing so putting the date is very important. Now, thanks to Amber, I can make LARGE batches of dough at one time and just freeze what I don’t use at that time for quick and easy cookies later!
Between my kids, Lexi’s boyfriend, hubby and myself, the first 12 that we baked did not last long at all and I put some more in the oven tonight for a treat. Took 12 out of the bag, put them on the tray, preheated the oven to 375 and let them thaw a bit while the oven heated. This time I took them out at 10 minutes because hubby complained the others were too hard. They were perfectly cooked through, crispy on the edges like I like and super soft on the inside just for him!!
- 2 1/2 cups Flour
- 1 tsp. Baking Soda
- 1 tsp. Salt
- 1 cup Softened Butter
- 3/4 cup Sugar
- 3/4 cup Brown Sugar
- 1 1/2 tsp. Vanilla Extract
- 1 tbsp. Cinnamon
- 2 Large Eggs
- Preheat oven to 375
- Sift together flour, baking soda, salt and cinnamon in small bowl, set aside
- Combine butter, sugar, brown sugar, and vanilla in a large bowl
- Beat until creamy
- Beat in eggs, 1 at a time
- Add flour mixture, a little at a time until dough is thick and sticky
- Scoop onto ungreased cookie sheet
- Bake 8-10 minutes
