School has been back in session for 3 months now and I think we finally have a good routine down. The kids have clubs almost every day, Lexi has Junior activities, a job and is studying for the PSAT’s and of course there is all the homework. I don’t remember having that much homework when I was in school, but then again, her school is much more rigorous than mine was.
You can imagine that I don’t have a ton of time to cook in the afternoons, so quick dinners are a must. Even if the cooking time is a little longer in the oven, as long as the prep time is short, it helps. That’s why my family loves our Applewood Bacon Pork Loin.
Only 2 ingredients and minimal time spent prepping, all it takes is some cooking in the oven while I help the kids with their homework. Pork loin and bacon are all that are needed, unless you count sides, to have a great meal on the table on busy school nights. This recipe is even perfect for me because there are no carbs in pork!
We typically pick up a loin that is pre-marinated and already has some chopped up bacon, for convenience of course and a nice package of Applewood Bacon, our favorite flavor. Its bacon on bacon on pork, what’s wrong with that?
But, you want to know how to make this amazing dinner right? Well here ya go!
First, lay the bacon out on a piece of tin foil, overlapping since the bacon will shrink to the right size on the loin.

Then, place the loin on the bacon and wrap the bacon around the loin. Wrap it up in the tin foil and secure the ends. Place in the oven at 350° on a broiler pan for approximately 60 minutes or until the internal temperature is 160°. Remove from tin foil and put under the broiler for 3-5 minutes until it reaches your desired coloring and bacon crispness. As you can see, we like a like bit of charred bits.
And there you go, delicious, Applewood Bacon Pork Loin that only took about 5 minutes to prep and while it was cooking, I helped Gavin with his homework. By the time we were done, it was time to get cleaned up for dinner. Perfect timing!
